Avocado Gazpacho

This creamy avocado gazpacho is extremely refreshing! It's something you can easily blend and enjoy for either lunch or dinner. It's also a savory alternative to smoothies. The avocado adds healthy omega-3 fats to this dish and makes this soup filling as well. The spinach adds iron and magnesium, and when eaten with the healthy fats from the avocado your body is also able to absorb all of the nutrients from the spinach more efficiently. The Jalapeno, garlic and ginger add a flavorful spice, and the lime juice really elevates all of the other flavors combined.

  • 4 Large avocados
  • 1 Garlic clove
  • ½ tsp. Minced ginger
  • ¼ Yellow onion
  • 2 Celery sticks
  • ¼ Cup parsley leaves
  • ¼ Cup packed spinach
  • ¼ Cup lime juice
  • 2 tsp. Himalayan pink sea salt
  • ½ tsp. Black pepper
  • ½ Small jalapeno, optional
  • 1 qt. Vegetable stock, chilled


  1. Puree all ingredients in a blender.
  2. Add more salt or lime juice according to taste, if needed.
